Domaine Les Hautes Noëlles Cabotage

Cabotage is a wine that takes its time, measured, composed, and built with quiet intent. And no, despite the name, this isn’t a Sabotage, though give it time in the cellar and it might just fight for your attention all the same.

From the vineyards of the Loire Valley, this is Chardonnay with depth and purpose. At Domaine Les Hautes Noëlles, the grapes are harvested by hand at full ripeness, allowing the fruit to reach its fullest expression before a natural fermentation gently begins. The process is unhurried, guided rather than controlled.

Ageing for 8 to 10 months on its lees, with regular bâtonnage, brings texture and a quiet layering of flavour. The wine opens with soft notes of ripe peach, vanilla, and almond, generous but composed. With time, a deeper hazelnut character begins to emerge, adding warmth and complexity without ever overwhelming the freshness that runs through it.

Chardonnay here takes on a more rounded, expressive form full-bodied, yet still finely balanced. The lees work gives it weight and a gentle creaminess, while the natural lift keeps it poised and precise.

This is a wine built not just for the moment, but for what comes after, structured, evolving, and confidently understated.
