Luis Perez La Escribana

Nestled just northwest of Jerez, the Pérez family has been deeply rooted in viticulture for generations, blending tradition with a passion for exploration. Founded in 2002 by Willy Pérez and his father Luis—a noted oenology professor and former winemaker at Domeq—the bodega delves into the rich history of the pagos, or single estates, that once defined the character of Jerez wines.

At the heart of their winemaking is the unique albariza soil of the region, which varies significantly across its sub-types. Their vineyards in pago Balbaína Alta are planted on Tosca Cerrada soil, known for its ability to fracture easily, allowing vine roots to extend deeply into the earth. This particular terroir, combined with the proximity to the Atlantic, infuses their wines with a distinctive freshness that is hard to replicate.

The Pérez family crafts Vino de Pasto, an unfortified wine that embodies the essence of Jerez. The grapes are harvested in two stages, with the first pick capturing slightly greener fruit to impart a lively brightness to the wine. Ageing under flor adds a delightful salty savouriness, enhancing its complexity. Made from the Palomino grape and cultivated through organic farming practices, this wine offers a true reflection of the Pérez family’s commitment to quality and authenticity.
