Zéphyr is named for the soft western wind—gentle, invisible, yet capable of shaping everything it touches. There’s a similar feeling in the glass here: quiet power, fine detail, and a freshness that seems to move through the wine rather than sit on top of it.

From a carefully selected parcel in the Loire Valley, this is a pure expression of Melon de Bourgogne, drawn from 40-year-old vines rooted deeply in schist and saline soils. At Domaine Les Hautes Noëlles, the approach is patient and instinctive—hand harvesting with strict selection, spontaneous fermentation using indigenous yeasts, and a long 24-month élevage in underground tanks. Nothing is rushed, clarified, or overly corrected; instead, the wine is allowed to settle into itself.

In the glass, Zéphyr opens with delicate aromas of white fruit and a subtle almond note—restrained, but inviting. The palate builds with more presence: structure and volume supported by a clear mineral backbone, shaped by the schist-rich terroir and a saline edge that brings definition and lift. Beneath this tension, there’s a gentle, almost luscious texture that keeps the wine from ever feeling austere.
