Perles des Noëlles feels like a breath of coastal air captured in a glass, fine, lifted, and quietly luminous. The bubbles are delicate and persistent, carrying a sense of movement and clarity that gives the wine its signature lightness, while an underlying oceanic freshness keeps everything crisp and alive.

From the Atlantic-influenced vineyards of the Loire Valley, this is a traditional method sparkling wine crafted by Domaine Les Hautes Noëlles. The blend is led by 80% Folle Blanche and 20% Grolleau Gris, with proportions that may shift slightly depending on the vintage. Harvesting is carried out partly by hand to ensure only the best fruit makes it into the final wine.

Produced using the traditional method (méthode champenoise), the wine undergoes a secondary fermentation in bottle before ageing “sur lattes” in underground cellars for over 15 months. This slow maturation builds finesse into the mousse and allows a subtle depth to develop beneath the wine’s naturally vibrant character.

In the glass, it shows a pale hue with faint green reflections, bright and inviting. The nose opens with mineral precision, followed by notes of candied lemon that bring a gentle sweetness to the aromatic profile. On the palate, the finesse of the bubbles enhances a vivid sense of freshness, giving the wine its elegant, flowing structure. The finish is long, clean, and quietly persistent.

This is a sparkling wine defined by balance light in feel, but never lacking depth and made to bring energy and brightness to the table from start to finish.
