Cauro Ventum Garnacha

Cauro Ventum is a standout among the three wines produced by Bodegas Saura, an esteemed winery nestled in the heart of Bullas, DO. Located in the Murcia region of southern Spain, near the town of Caravaca de la Cruz, their 15 hectares of organic vineyards thrive at altitudes of 600-900 metres. The vineyards, planted with Garnacha and Monastrell, benefit from a Mediterranean climate tempered by altitude, ensuring grapes mature in ideal conditions—cool nights, warm days, and loamy, well-drained soils.

This artisanal approach is mirrored in the winemaking process. The vines are grown organically without irrigation using the traditional Gobelet (bush vine) system. Hand-harvested grapes are fermented in unique limestone tanks from a local quarry—a practice exclusive to this winery—using 50% destemmed grapes and 50% whole bunches. After 8-10 days of maceration, the wine moves to oak foudres where malolactic fermentation occurs. Bottled without filtering and sealed with wax, Cauro Ventum reflects Bodegas Saura’s commitment to natural, minimal-intervention winemaking.

The wine itself is a captivating ruby red, offering an aromatic bouquet of ripe red fruits with herbal notes of rosemary, balsam, and pine, alongside a subtle gamey quality. On the palate, it is refreshingly light for a higher alcohol Garnacha, balanced by fine structure and a touch of acidity that lingers through the finish.
