The 2023 vintage, marked by frost and climatic challenges, resulted in lower yields but bestowed exceptional concentration and quality. Hand-harvested at night to preserve freshness, the grapes undergo skin contact for 7-10 days, followed by natural fermentation in stainless steel. The wine is produced with minimal intervention, adhering strictly to Demeter Biodynamic guidelines, and bottled without a capsule to reduce waste.
