Pecorino is a grape variety that is deeply rooted in Italy's central wine regions, known for its hardiness and ability to thrive at altitude, withstanding cool temperatures. The name "Pecorino" is derived from the Italian word "pecora," meaning sheep, as the grape’s origins are closely linked to the ancient practice of grazing sheep in these regions. The name reflects not only the history of the grape but also its connection to the pastoral landscapes where it was traditionally grown.
Archivio’s Pecorino offers a compelling expression of this resilient variety. The grapes undergo an initial gentle pressing with four hours of skin contact, followed by a further soft press, before being left to ferment with natural yeasts. Resting on the lees helps to develop complexity, texture, and body. The result is a wine with structure, exotic fruit notes of ripe peach, citrus zest, and golden apple, balanced by a fresh, mineral backbone. Hints of wild herbs and a touch of almond add further depth, leading to a long, mouthwatering finish.
This Pecorino is both textural and crisp, offering the perfect balance between freshness and complexity. It pairs beautifully with seafood, creamy risottos, and grilled vegetables, showing why this ancient grape is once again gaining popularity among wine enthusiasts.
