Chateau Picaron “do not replicate- we innovate”. All Picaron wines are unique expressions of Merlot. Using creativity, experimentation and a pioneering approach, the potential of Merlot is unveiled. Soon to be certified organic and with no animal products used during production, farming is built on a sustainable model with minimal intervention and as few additives as possible. Mother Nature is seen as their greatest ally. Situated on the clay-limestone ridge of St Emilion on Bordeaux’s left bank, the 4.5 hectares of vineyards are vinified on a strict plot by plot basis with none of the plots being blended, therefore each wine is a true representation of its unique terroir. Chateau Picoron’s wines are produced following the “ouvipo” philosophy: ouvroir de vins potentiels, honouring natural and self imposed constraints. A 2000 year winemaking heritage via the Picaron family who manned the ramparts since 1570 has turned antipodean with the arrival of Glenda and Frank Kalyk in 2015. Tattarrattat is vinified using the Beaujolais centric method of carbonic maceration giving a juicy, fresh wine with tart red apples, a sour cherry or two and some red plums. Clean and crisp and fruity with a gentle effervescence. Utterly delightful and utterly drinkable. Welcome to the world of palindromic Merlot courtesy of Picoron.
